gpu lock doesn't want to unlock

That is simply a plastic tab lock. You were pushing it correctly in the first place. It can be seen in the video that it is not even engaged when you have your finger on it. It's not what is preventing you from removing the old GPU from the system, if that's the issue you came here to resolve.
In the video, the lock doesn't even appear to reengage after you release it. You're going to have to perform a more careful inspection of the PC to determine what is causing the old GPU to remain stuck.

It may be a silly question, but have you disconnected all of the cables attached to the old GPU?

I had the same type of lock in a LGA 775 system, you need to pull it away to unlock the GPU. You almost have to pull it so far away that it almost feels like your going to break it but it will be fine.
 
Yeah, you're right. Looking more closely those are not levered style locks. They do pull away from the card to disengage and I agree that often you have to pull them really far to get them out. The lock can be more clearly seen here.
