Question I'm having trouble with pulling out cables (mechanism) from psu to graphics card and motherboard, can anyone help?

Are you pushing down on the latch?

Can you see the little lever: One end is the "hook" and that end is pointed at the white lettering on the port.

The other end (near the incoming wires) needs to be gently pushed down enough to raise the hook end above the small ledge that can be seen in the photograph.

The hook must go up enough to clear the ledge and must be held there while gently rocking the connector as you pull the connector out by its' body.

Do not pull on the wires.

Not a matter of force - be careful. If the connector still refuses to budge then post accordingly.

Yeah the latch is 100% pushed down and on the other side i can clearly see it is not keeping the wires to the gpu, but its still stuck, (i tried with a nail on my fingers and did manage to check that i created a small opening, but its still QUITE stuck ;-;, i dont even WANT to try the one connected to the motherboard, its a nightmare, i think i might just break the board ...)

I took another look: on the other side of that connector there appear to be two white arrows pointing towards each other.

What is in between the arrows?
The place where the cables separate, nothing else, also there is a latch behind those two arrows too (those wires are for the motherboard)

So you CAN disengage the latch but still cannot remove it by pulling. You can try this technique. It will exert force to push the connector out of the socket, without actually pulling hard on the socket itself and risking damaging that. Find a screwdriver with a straight blade that is just a bit wider than the space between the socket edge and the small ridge in the back edge of the plug, near the locking tab lever. Depress the locking tab and gently twist the screwdriver to force the plug away from the socket. You may need to do this at several points around the plug so that you move one end looser, then the other, than back to the first point, etc. This way you can sort of "rock" the plug out from the socket until it is loose enough that a gentle pull can get it free.

I will try this with the graphics card, but i don't think i can reach the wires at the motherboard as well.

Regarding: " (never knew psu cables can be so hard to unplug)".

They should not be.

Unfortunately many products are suffering from cost cutting in documentation, design, materials, manufacturing, and assembly.

Quality suffers and problems result.

What should be a 2 second effort becomes a difficult job.

Just take your time and be very careful.

Unfortunately, power cables do fit snugly and can be hard to remove.
You need one hand to hold the latch open. If it is not sufficiently open, you can't remove the cable.
To get a snug fitting out, I hold the latch open with one hand and slip the end of a thin screwdriver blade between the seam and twist to lever the cable up a bit.
Work the screwdriver around to make the opening bigger.
Do not pull on the cables or you will pull them out.
Grip the plastic and rock the plug a bit.
