Gamerguy8, both of the processors you mentioned have huge overclocking headroom (if you want to OC).However, I would suggest waiting a little bit and buy the new i7-930 processor (approx. price 284$) that will be released later this month, replacing the i7-920. i7-930 is, like its predecessor, a quad-core CPU with great overclockability but I recommend it for another reason.I5-670 and i7-860 are both compatible with 1156 socket, while i7-930 is compatible with 1366.This means that by buying a i7-930 and a 1366 mobo you will be able to upgrade your processor in the future and have one of the high-end quad-core and hexa-core CPUs, because 1156 is a socket for the mid-range and low-budget processors but 1366 is a socket for the higher end.
