I'm thinking of running a dual screen setup. I already have a 24" 1080p monitor and now I'm thinking of getting a 32" 1440p monitor. Will my RX 580 perform at at least 45-50fps on high on games like AC Origins, GTA 5, The Division 2, CoD MW, KC Deliverance etc? I'm not in it for the numbers, I'd like the game I'm playing to look passable while I have a nice experience.

I have my doubts.

Depending on the game, my son's RX580 does well at some, or struggles with two or three of his games, at 2560x1080. That's fewer pixels than 2560x1440 would be pushing.

Actually, that's something to consider as well. Not everyone's a fan of it, but maybe going with an ultra-wide (basically a roughly 21:9 aspect ratio instead of the usual 16:9 aspect ratio) would be the way to go. My son and I both find it a lot more enjoyable to have the wider field of view, and, at 2560x1080, it's less demanding than a standard 1440p monitor.

I'd suggest getting 32-35 inch screen if are considering going 2560x1080, though. At 29", the vertical height is just too short.
