If buy the Corsair Retrofit Kit will my Corsair H110i GT fit in the LGA 1700 bracket?

I think you need the ELITE variant. Their website isn't very clear about it, but the English page explains the kit doesn't come with the brackets or backplate, the ELITE variant does.

As an FYI, if you haven't bought a board yet, you might want to check out Asus Z690 boards. They have LGA 1200 and LGA 1700 mounting pattern, avoiding the need for said bracket.

That's exactly what I was afraid of. I bought the Gigabyte Z690 Aorus Ultra, does it have the LGA 1200 mounting pattern?

12th gen processors are not as high as previous lga1200 processors.
If you want to use lga1200 mounting pattern cooler, you will also need an adapter to adjust the height and get the proper mounting pressure.
Your cooler maker should be offering such a kit.
