A good list of parts.

Since you are not a gamer, why not use the integrated graphics capability of the 3570K and the motherboard?
It will be sufficient for all but fast action games.
You can always add a discrete graphics card later.

The 520w seasonic psu is capable of running any of the new 28nm based graphics cards

I suggest you add a ssd for the os and some apps. Everything you do will feel so much quicker.
A 120gb ssd will hold the os and a good number of apps.
I would look at the intel 330 series.

Thanks for the tips. I think I will wait on the graphics card and get the SSD. Is the aftermarket CPU cooler necessary? There are a lot of fans in the case.

Necessary, no. But I recommend it for several reasons.
1) The stock Intel cooler gets noisy as the small fan spins up under load. The hyper212 fan is 120mm and is much quieter.
2) The Intel pushpin mounts can be tricky, the 212 backplate mount is easier and more secure.
3) With a "K", how high and easy your OC is partly depends on how good a cooler you have.

You buy a "K" to give you the option to OC; that is why there is a "K" variant.

Most advice I've read says 8GB is plenty for everything except video editing.
