I chose the H210i mostly because of looks and the price.
The RAM listed (and also the one I chose) is not on the validation list of the motherboard, should that be a problem?
Also, CL16 to CL18 should make a noticeable difference right?

With the level of GPU you will be using, it doesn't really matter much. 3200 cl16 is just as fast as 3600 cl18. I agree on a different case, for better airflow. Also, the 6700xt is cheaper, while being slightly faster than a 3060ti.

Air flow in the NZXT case in the first post is going to be abysmal for a system of this power. Your reading in that regard is correct. You may wish to select something with better airflow.

Whatever PSU you land on, make sure it is fully modular and leave out any cable you don't need. You will want to have a fan pretty much anywhere it can mount in the case in a sensible manner. In many cases, going with an ITX build is making sacrifice to the performance/heat, or size. You will find that your future upgradability is limited as well, such things as 4X RAM, expansion cards for things like streaming, big graphics cards (and often the power supply to push them).

ITX builds can be great, but you also spend more money on making one that a comparable M-ATX system (which are the least expensive format). I am fan of ITX and have build many alongside the headaches included. If I might make a suggestion, consider M-ATX/ATX in the smallest case you can find for that format. It opens so many more possibilities in expandability and almost without fail run cooler and quieter.

You are absolutely right. I actually thought that, and sorry for my ignorance, micro-ATX was smaller than mini-ITX.
So what am I looking for? More height? More depth?

Can you advice me a micro-ATX case that would be enough to cool the 5800X3D and RT 6700XT?

I generally try not to make specific recommendations on a case unless asking about a specific one I have owned or dealt with. Cases are such an aesthetic choice as you have to like the look and functionality of it yourself. It is also not uncommon for folks to stick with a case over a refresh or two.

In a very general sense, case brands such as Be Quiet, some of the Corsair cases, Phanteks, etc., all of them have versions with the mesh front and typically good top and back venting. Some even add flow for bottom mounted fans. What you want to avoid are the glass front with the small vents to the side/bottom that are typically for nothing aside from looking at RGB fans while your hardware bakes inside. I personally like Lian Li cases and am currently using one of the o11D versions.

It is always a good idea to try and find some buildout and usage reviews for cases you are interested in such that you can be aware of any shortcomings or pitfalls before putting out the money and in the work.

Is it worth it to give more 150€ for the 5800X3D instead the 5700X? I've seen some reviews, I'm not decided... I'm afraid temps will be a problem.
The 5800X3D is worth it if you want maximum performance. However from my point of view the 5700X is very capable and runs a lot cooler, it would be my CPU of choice for an iTX build. If you go mATX though then you shouldn't have cooling issues if you pick a good case.

I run a 5800x in an ITX case, with just a Vetroo V5. My other ITX rig has a 12700k. Case setup, and airflow matter, regardless of size.

What case are you using for these builds? Just curious.

I had my 2700X inside a Metis ITX case that I liked more for form than function. Even after some modification it just turned out not to be a great application for that level of power and heat. On the other hand, when I moved it down to an 11600K (and after the mod) it worked really well for that.

The 5800X3D I believe is hotter than the 5800X. The reason I mention it is because iTX cases usually have more limited cooling options like reduced cooler height or limited radiator support. I wouldn't put a 12700K in an iTX case that supported only 120mm AIO's for example.

The problem with that case is the HEIGHT. I need a small case because I travel a lot.
I saw the Jonsbo D30 case (which has very little height), which I think could have better airflow, because the GPU isn't near the PSU or the PSU shroud, like in the h210.

If you think temps is going to be a problem I can go for a 5700x instead the 5800X3D, or just get a very good CPU Cooler, but I think the GPU temp will be more difficult to handle.

Edit: I actually might consider Lian Li O11 AIR MINI for the 382mm in height...
