Is it safe to use a Molex to SATA adapter?

It's not ideal.....but if you are careful to make sure it's connected properly I doubt you will have a problem.

Ideally you would want to come right from the PSU to a SATA plug.

To an extent yes, to another extent no. Yes, if you plan to use it for a short period of time, like backing up data or taking off critical information. If you plan to use it long terms because your PSU lacks the necessary connector for your SATA device, then yes that's going to be a problem. Thumb rule, if your PSU lacks the necessary connectors for your devices you either have the wrong PSU or the wrong device.

Remember, Molex to SATA only provides power. You also need the SATA data cables connected to the storage device and a SATA port on the motherboard.
