Building a HTPC running SageTV, but would also like to be able to game on it some. (And be somewhat future proof). The 2gb seems like it would make more sense, but a lot more people were buying the 1gb. I thought maybe there was something I didn't know about. Any advice or info on pros and cons? Thanks in advance.

You will get almost no gain out of the extra gig in today's games at standard display resolutions (such as 1080p). You will see absolutely no difference for watching movies.

Save the money and get the 1gig. No real reason to go 2gig unless you like buying $35 of nothing.

Get the 1GB card and be happy. Next year games will probably start making use of more than 1GB of RAM, but since you seem like just a casual gamer I don't think it will be a big deal for you unless you really are buying the latest games. If not, then it will be longer before you would feel the benefit for more than 1GB of VRAM.
