is there a bottle neck ?
and what would be the best RAM and mobo to go with that, I don't care about the price.

I like when its "I don't care about the cost" . Are you running Win 64 bit? I don't see a bottle neck , it certianly would not be the 580"s in Sli and the 2600k is top notch. You are building a dynamite Pc. Make sure you get an 850w psu or higher. Antec High Current is nice.

 
No bottleneck.

1.5v (or less) DDR3-1600. Corsair, Gskill, Kingston.

Mobo would be P67 or Z68. I'd go with the Z68. One which allows you to add another 580 down the road. Asrock, Asus, MSI.

Make sure you got good juice to power that with. You'll need a high quality 650w+ for a single card. Antec, Corsair, XFX.

If your going to add another 580, you'll need a quality 900w+. If your doing any heavy overclocking I'd recommend a 1000w.

I don't see an edit option so I will do it here:

After a long research I have decided to go with i7-2600k as a CPU and 2x GTX580 for a SLI. But what I can't decide on are the RAMs and the Motherboard, any input is highly appreciated. Keep in mind that cost is not an issue, and would water cooling with radiator and stuff would be better than a heat sink ? that goes for both the CPU and the GPU, well also the motherboard chipset.

Yes I will run Win 64, and would a faster RAM like 1866 or even 2000 be better than 1600 or would it be bottlenecked ?

If you are going with Win 64 then you can up it to 16 gb on the ram.

The reason I am puting Corsair Dominator is that if you decide to go with water cooling , Bitspower makes a really good cooling block for the Corsair Dominator. This ram is also very good and you will not have to worry about bottle neck especially with 16 gb of it and you can always over clock it easy with that Asus board.

I do highly recomend water cooling , if you are into overclocking then it is the way to go, you don't have to worry so much about the temps and you can get the overclock a lot higher. The thing with water cooling is the maintenence and you have to be careful installing it you don't want to get fluid on anything. If you are interested in water cooling and want to know more just let me know . I have had water cooling in my computers for several years and I don't know if I could ever go back to fans.

I think I'm going with the water cooling, I thought that it has all the parts together in one package but after I looked it up, it seems like every single part is sold separately, I'm going to look more into it. Thanks a lot for your help :)

They do sell a water cooling package that would have all the things you need and for just starting out that might not be a bad idea untill you get used to putting together a water cooling setup.It is hard to start out building a custom setup right off the bat. @Inzone I think I got the hang of it, I have just read a guide and complete explanation about it, its just water blocks installed on chips and tubes to connect the water blocks to the radiator (which cools the water) with the help of a water pump that may or may not be included with a reservoir to hold extra water in it. If I'm mistaken in any of what I've just said then I'm going with the complete package, please correct me if you see any mistake because water close to electric circuits is serious s*** :p

@mjmjpfaff my budget can range from $2000 to ~$3000-$3500.
I have already decided(or more like convinced) to buy an i7-2600k for a CPU and two GTX-580 for a SLI, so I need an advice about the rest of the parts to complete my rig with a priority of performance over price, regardless of value.

This system will be used for highest end games with max settings @ 1920x1080.

About peripherals, I'm not really sure what you mean by that, but if you mean printers or w/e other parts that is outside of the rig then no, maybe only the water cooling if no one convince me that heat sinks are close enough to water cooling. If you mean the monitor by saying peripherals then I'm going for a single ~24 inch monitor.

So far I'm confused: is DDR3-1600 is the best to go with my current CPU and Video cards regardless of cost ? regarding the motherboard It's obvious that it will be the last part to pick after I know what spec's I have to look for in a motherboard according to whatever I have decided to buy for the rest of the parts.

i5 2500k-water cooled. only i5 2500k because the board will allow you to upgrade to ivy bridge so no need for the future proofing i7
