Looks good to me. Everything you have there will work fine. If you want to make any adjustments and depending on what you are using the PC for, I would look into an SSD drive and maybe an intel processor. I'm assuming gaming is the goal?

* 16GB of ram is overkill, and 8GB is generally sufficient. You could use the money for a SSD and get a better performance boost.

* a Phenom II X4 980 Black Edition 3.7GHz processor would be cheaper and better for gaming.

* You could switch out the GTX 560 for a Radeon 6870 for the same cost and performance but less power use. Obviously this is card dependent and as an example the HIS 6870 IceQ X is almost a dead match for the MSI GTX 650 Twin Frozr II, but uses ~50W less at load. Just something you may want to look into as it makes cooling your PC easier.

* at the specs you listed you could get a Corsair Builder Series 600W PSU and save $20. You could easily go down to a 550W PSU assuming you aren't overclocking. A 650W PSU probably isn't enough to run SLI with the 560, so there really is little reason to buy that big of a PSU especially since you will get better efficiency at idle with a smaller PSU.

~~~~~~~~~~~~~~~~~
note on the i7-2600k - unless you are doing video editing or some other thread intensive task, the i5-2500k is more than sufficient for gaming.
The SSD would makes things very snappy for you, essentialy boosting the speed of your boot times, anything in Windows, and any applications you might install on it. SSD stands for Solid State Drive and it is basically flash storage as opposed to Hard Disk Drives, which incorporate moving parts and are much slower.
I use a 60GB SSD for my OS (Windows 7 and key applications/games) and a 600 GB HDD for extra storage (music, movies, etc.)
Also, the i7 is overkill for gaming. Look into the i5 2500 and i5 2500k (2500k if you want to overclock).
The SSD isn't going to do much in the way of graphical performance, that's more CPU, GPU, maybe RAM. The SSD is more for over all PC speed and "snappiness" if you will.
