A PCIe 3.1 SSD will work on a PCIe 3.0 motherboard for sure but you obviously won't get the benefits that PCIe 3.1 offers. So there's little point buying a PCIe 3.1 SSD for your current rig, especially if it's considerably more expensive than a PCIe 3.0 one (unless you plan on upgrading to a PCIe 3.1 motherboard in the near future).
