Power Supply for ASUS Z9PE-D16

Admittedly its been a while since I've built a server type build. In short, I'm creating a lab server for some business related work.

The motherboard that I've landed on is a ASUS Z9PE-D16 SSI EEB Server Motherboard Dual LGA 2011 DDR3 1600, which is quite nice IMHO. The problem that I'm having is finding a powersupply to fit the 24+8+8 pin board. I've found ENERMAX Platimax EPM1200EWT (http://www.newegg.com/Product/Product.aspx?Item=N82E16817194096), however I dont believe I need that much wattage and frankly I'm not looking to spend that much on a powersupply if it can be helped.

The server for now will house 1 E5-2640 CPU expanding to 2 later on at 95 watts each I believe, with 32GIGs of ram. There will be no hard drives since the server will run off a a NAS via iSCSI. Also, there will be no other components such as cd-rom drives, etc.

Is it possible to get a 500 watt power supply with a 24 pin connection and use a cable adaptor to split two 4 pin connectors into 2 x 8 pin connectors?

From the mother board manual:

24-pin EATXPWR1, 8-pin EATX12V1/EATX12V2
