So I set my bios to default settings and now my pc won't boot. Says I have no os? 🤷🏼‍♂️

Resetting the BIOS doesn't get rid of the OS or affect the storage drives directly at all.
However it will reset your boot priority, have you ensured the correct storage drive is the first listed drive in your boot order?

Only things I have plugged in are an SSD, headset, mouse and keyboardThis can happen if you inadvertently leave a non-bootable thumb drive plugged in and the PC is trying to boot from USB.
It's set to Ahci which is what it was before and nope no raid setups.check how the sata controller is set. AHCI or Legacy (IDE)
If previous set was ahci and now reset to legacy, it won't boot windows. If viceversa most likely the same.
Try switching to the other mode.
Also, did you had any RAID setup with your drives?
