Question Two systems, specific questions

Okay, here goes:
My build became two builds. The intended build is an R9 7950x3d; the unexpected build is an upgrade from an R7 3700x to an R9 5900x.

The original intended build (in progress); it will be a business and for fun workhorse (4x O/S (Ubuntu; MX Linux; OS X Mac Pro (as long as that lasts); Windows 11), each individually switched on and off in the UEFI -only one OS drive active at a time):

Ryzen 9, 7950x3d CPU
Asus RoG Strix 670E-E MoBo
Merc 310 Radeon 7900XTX Graphics
64 GB, Trident Z5 Expo RAM
4x Samsung 980 Pro SSDs
2x, 20 TB, Seagate Exos X22
2x, 4 TB Seagate Exos M005

32 GB, TeamGroup Dark Z DDR4 3600 RAM (I am not confident this will overclock beyond base DOCP boost, which it handles just fine with the 3700x)
1x Seagate Barracuda 4TB; 3x WD Blue 1TB (yuk): These WD drives will be replaced with Seagate X22s

My two questions:
1. How to pair these AIOs with these systems. My gut is to go with the "Performance" on the New Build (7950x3d). But, knowing that I intend a hard overclock on the Rebuild System (5900x), taking it to the edge then backing it of until it becomes stable, it may be better used on the rebuild system. I'm just not sure which AIO is more appropriate to which system in these circumstances.

2. I think the weakest link in the rebuild will be the RAM. I don't think it will overclock beyond the base DOCP boost. Any recommendations for high performance RAM for this system (5900x) is greatly appreciated.

Any thoughts are welcome. Thank you in advance for your suggestions.
