Hi

My graphics card is dead and I want to change it. I want to take advantage of this to change my processor for a more powerful one.

My current computer contains.

Ryzen 5 5600xAsus
B550-F ROG strix
Corsair vengeance 32go of 3600mhz
RTX 2070 - Dead
Seasonic 520 PSU
Noctua NH-U12 + fans

What parts would you recommend to improve my current setup ?

Yes, it's mostly for gaming, my current CPU has some trouble running FM24 with all the leagues that I have loaded in the game.
Is there a big gap between the 5700x3d and the 5800x3d? A friend of mine recommended it, but where I live there's about a $150 price difference

Are your games cpu limited, or are they graphics limited?
Fast action games need strong graphics cards, as does playing at higher resolutions.
Games such as sims, mmo, and strategy games are more cpu intensive, particularly in single thread performance.
It seems that since you have a dead gpu, that needs to be replaced first.
Pick a card that is a significant upgrade or you will be disappointed if you don't see magical results.
Here is tom's gpu hierarchy chart:

I think 3070 or 4060 class cards.

It is likely that you will also need a stronger power supply.
Do not skimp on quality.
Yes, you will pay more.

If you can borrow a replacement graphics card, run this simple test:
Run YOUR games, but lower your resolution and eye candy.
This makes the graphics card loaf a bit.
If your FPS increases, it indicates that your cpu is strong enough to drive a better graphics configuration.
If your FPS stays the same, you are likely more cpu limited.

Without some sort of a test, you are just guessing.
FM24 seems to be a largely single threaded game.
The X3d processors excel in that department.
