So to fix this, I reinstill windows, fresh wipe with only the M.2 plugged in?
If you want to make your 500GB windows drive bootable, then execute following from elevated command prompt. Regular command prompt will give error on last step.
(if you get any errors, then stop immediately)
diskpart
list disk
select disk 3
list partition
select partition x
(select 465GB partition, x=1 or x=2)
shrink desired=500
create partition efi
format fs=fat32 quick
assign letter=H
exit
bcdboot C:\windows /s H:
Shutdown, disconnect all the other drives, leave only windows drive and boot into windows.
If successful, then reconnect all drives, boot into windows and delete efi system partition from 120GB drive.
diskpart
list disk
select disk 2
(select 119GB disk)
list partition
select partition y
(select 100MB efi system partition, y=2 or y=3)
delete partition override
exit
