How do we create subnets with an Ubiquiti mesh system.
The system in place now is made up of 2 AP6 Pro

When you say "subnets" do you mean VLANS with independent IP ranges? If so you need not only APs but switches that support VLANs and a router than supports VLANs and multiple DHCP instances. It is your entire network that has to support what you want, not just the APs.
