I've been looking into buying another monitor, but the problem is that i'm struggling to figure out if I want a 1440p or a 1080p one. I'm a gamer, so naturally I don't want to lock myself down to 1080p, even though I typically only play at 1080p 60hz.

But I also watch a lot of anime, which is typically produced/streamed at 1080p. I worry that if I get a 1440p monitor it will cause the image quality of the 1080p anime to drop. If I do get a 1440p monitor, will the image quality of 1080p video suffer even if the monitor size is the same?

The quality itself will not drop but you will get stretched out pixels, 1920x1080 will be stretched out to 2560 × 1440.
If you will notice or not nobody but you can tell you, you have to see yourself to see if you notice it or not.
There is always the option to watch anime in windowed mode in which case it will play at 1080p at original quality and just won't fill out the whole monitor.
