I was looking at my motherboards qvl for ram and they haven't tested any 3600mhz sticks yet
Ryzen 5 5600x officially support up to 3200mhz speed of RAM, any memory below that line should run just fine, QVL or not. Just choose trusted or good brand one.
QVL not always updated by the way, so much new RAM kits nowadays.

Since Ryzen 5 5600x officially support up to 3200mhz, if you want higher speed, it's undoubtedly by OC. Take the RAM base speed as what you get for your money, and take the higher speed on successful OC as a bonus.
