I have Nvidia 580 SLI, Intel 2600k, Gigabyte Z77X-UD5H, and Corsair Dominator 8gb.

I ran a benchmark with Fraps on the Nvidia "Endless City" program and got an average of 60 FPS lowest 59 and highest 68. Out of 10 what would you rate that? I would say 8.

With the possibility of having three or four video cards strung together, two bridge connectors are needed on each card so as to connect to cards on adjacent sides.

Ok, if the benchmark doesn't list SLI as an option, it might not support it, in which case FRAPS looks about right. You might also try testing with 3dmark6. Test with the present SLI setup and then disconnect one card and test the computer again. You should definitely see a difference if the SLI is working properly.
Check to make sure that both cards are hooked together properly with SLI enabled. Also check the game to see if there is a SLI option that might be turned off. Only guessing here, but I do remember a couple times people came to me with 2 cards in their machine and they wondered why it didn't work properly. Turned out they forgot to put on the bridge between the cards. Easy enough thing to forget, but it makes a big difference in performance.
 

Yup I hooked them together. Turned it on and well I don't think the Benchmark supported SLI, because I saw no option for it.

Another thing is that I see two bridge connectors; do you know what I am by that? Like almost as if you can put two SLI bridges. What are those for?
