I am gonna pair it with a i5-9600k and a rtx 2070.
I am thinking between Asus Tuf z390-pro gaming or Asus Prime z390-a.

Yeah i know but i wanna stick to intel
by snake oil, I mean, theyre useless
lets say between the 2 boards you showed

both are capable of overclocking
both have the same or close to the same amount of pcie or m.2 or sata ports
or whatever

the only things that may differ them is maybe a better vrm setup (which honestly isn't a big deal)
maybe dual bios which is actually really important but im pretty sure both have them
and like.. idk, reinforced pcie slots? which do like.. nothing?

buy the cheaper of the 2
