Star Control 2, still my favorite of all time. I play everything, from FPS to Simulation/strategy to dinky flash games. Out of this world and flashback were amazing! I think I still have my OotW verification wheel somewhere.
 
starcraft and heroes III - best games ever, don't forget Hercules
newer games - Crysis I and II , Fallout 3(the best new game), COD 4, Far Cry 2 and NFS series

and the rest, Empire earth and Age of Empires - these are my favorites, but if i would have to chose from those:
old-starcraft, heroes III, Hercules
new-Crysis, Fallout, COD 4
 
Well, if it is measured by time/money invested into the game, mine would be Star Wars Galaxies, (2 accounts for almost 5 years now at $14.99/mnth) which is almost $1800 invested and I won't even begin to guess time invested...too many hours.
If the measuring criteria is shear fun/playability... Worms Armageddon or Battlefiled: 1942
 
Ultima Underworld: The Stygian Abyss. As it turns out, I've even got the source code to the sequel, Ultima Underworld II: Labyrinth of Worlds.
 
The first 85% of Half-Life, before Freeman was teleported to 'space' was terrific! The remaining 15% of the game wasn't that good though.
Half-Life was probably the most immersive FPS I've played. And really great graphics for it's time.

The recently released F.E.A.R 2 - Project Origin is actually a surprisingly good FPS.
 
BioForge from the glorious days of Origin. It's a incredible well done "multimedia cd-rom" RPG / action hybrid.

Runners-up would be Tie Fighter (Lucas Arts), StarFlight (EA / Binary Systems), The Dig (Lucas Arts) and as usual Doom 2 & Quake 1 from id.

Good choice on Flashback but I do agree with someone who said Out Of This World instead of Flashback. Well, maybe... those two are just pieces of art.

Oh, and let's not forget Bethesda with Oblivion. It's a new game but, we have to admit it, it might be the best game of all time sometime soon.

Flight Unlimited Series

Any game that costs less than $50 and gives 1,000 (+) hours of enjoyment gets my thumbs up. Most of these modern games are only fun for the first few pass throughs, shame that.
 
I have a few but the one that I really love has to be Deus Ex, I have replayed that game many times and each time I find a new area or something I have missed before. Other honorable mentions are half life 1/2, system shock and fallout 3.
 
SW KotOR, StarCraft, Warcraft (all of them), Diablo (all), Baldurs Gate (all), Wing Commander (all), King's Quest and Planescape Torment is most memorable for me. I still playing most of them.
 
Knights of the Old Republic, and the sequel, The Sith Lords. They were one of the most immersive and entertaining sci-fi RPGs of their time, and I still replay them...over and over again...
