I'm building a new PC and I'm wondering if I should get a Ryzen 5 or a Core i5. I game, stream, but also do some mild video editing as well. Your thoughts?

Solution
Ryzen 3600 is all-around performance for that. But, you can get 9400f performance to perform just by -8% from Ryzen 92% to 100% if you know how. I previously chose no-brainer Ryzen 3600, but I have researched it so I choose 9400f with workaround. I ended up with -$50 - $75 cheaper cpu which I used for cooler. I use it now :)
Ryzen is no brainer for this perpose. Ryzen have double the threads from the i5. You can specify for what models exactly you aim. Ryzen 5 3600 or Ryzen 7 2700X (8 cores 16threads) is a good choice if you are on a budget but still the best pick for streaming and editing is Ryzen 7 3700X

I feel the price of a 2600 or 2600x with a X470 motherboard is much safer than a 3600 with a X570 motherboard. I'm aware that the 3600 can go on a X470, but it's not advisable as it can impact performance putting current CPUs in yesterday's motherboards, unless I'm mistaken?

Yes you are mistaken. You better take a 100$ B450 tomahawk with Ryzen 7 3700X rather a Ryzen 5 3600 with a 200$+ X570. Keep in mind you need a bios update for X470-B450. Msi b450 tomahawk have bios flashback + feature where you can bios update without any cpu or ram on the motherboard. Also you can look if you can find the MAX model that is out of the box compatible with ryzen 3000. I would avoid 2600 or 2600X for the perpose you want the cpu for , i would go minimum Ryzen 7 2700X. B450 tomahawk its still the best value for money motherboard even if you decide to take 2000series Ryzen or 3000.

Performance-wise, as long as the motherboard's VRM is good enough to not cause throttling due to power delivery limits, practically all motherboards from A320 to X570 perform nearly the same since all performance-critical logic is on in the CPU package. X570's main benefit is guaranteed out-of-the-box support for 3rd-gen CPUs and their new features.

Which motherboard variant should I go with if I don't plan to overclock but I also don't want it to be skipped on necessary components. My current motherboard for the FX 6300 I use doesn't even support Sata III or enough front USB 2s and 3s for my case.

So you feel a Ryzen 5 is not that much of a jump from the FX 6300? The Ryzen 7 is a bit pricey for a CPU. (Note: The FX 6300 is starting to show itself up to be a pretty big bottleneck today, which is why I'm considering to upgrade).

Of course its a huge jump of performance. But still Ryzen 7 3700X is the best CPU for the money for editing - gaming - streaming. If you can wait a bit more until you have the budget for this cpu it will be totally worth it. I own both Ryzen 5 3600 and Ryzen 7 3700X you wont notice any big difference in pure fps especially if you play at 1440p or with a mid range gpu but you will notice a big difference in fps while you are streaming or in render time.

I have a Ryzen 5 2600 which I run at 4 GHz on a B450 board (see my signature for my full specs) and I am a casual gamer and I do occasional video editing and encoding.
I also stream movies to 2 1080p TV's.
For me the 2600 works fine but a 2700x on an X470 board would obviously work even better.
I personally will not even consider upgrading to a 3000 series CPU until sometime next year after the bugs get worked out of the BIOS.
When I am ready to upgrade, I will most likely get a Ryzen 7 3700x and run it at stock speed on my current ROG Strix B450-F Gaming motherboard.

Totally agree with them, 3XX to 4XX MOBO is better rather getting the X570 which is more expensive where you can get older board, and update BIOS so that it would support 3rd gen processors, but for now you may get a 2nd Gen Ryzen CPU so that you can start your streaming because most of the BIOS update for 3rd gen are still in BETA State so there might be a lot of bugs and issue that may arise.

My friend has a Ryzen 2700x and he streams a lot specially online games and when I check the computer the Ryzen does it jobs when it comes to multi-tasking no hiccups for sure.

I think getting a 2nd gen R7 2700x is now cheaper if you look somewhere else and you can sell and upgrade your CPU if the BIOS update for 3rd gen support Mature.

for me I'm also planning to upgrade my CPU to 3rd gen and my MOBO MSI B350 Mortar Bios update is still in beta so might have to wait some time but for now R7 1700 still sufficient these days so might hang on for a while :D

But if money is not an issue then go buy higher end parts :D
