I play fortnite with 1080p monitor of 144hz. My pc specs are gtx 1080 i7-6700k 16gb ram 256gb SSD 1TB HDD and i cant even reach 240+ fps in fortnite. Sometimes my fps drops to under 144. Why it does that when im having good pc?

That's about right. Gtx 1080 isn't strong enough to keep fps consistent especially @ 240+ nor is your cpu capable of consistently preparing that many frames to keep up with other things going on in-game.

Your performance is fine for what it is.

If comparing videos, it's difficult to know how they've optimised the os in a way of gaining system resources toward a game. Typical windows configuration does have quite a few processes happening in the background and that takes away cpu focus on games. To improve in this regard, eliminating unnecessary processes can help, Winaero can do that for you.

So even others get 300+ with gtx 1070?
My average is 175
They may have a stronger cpu than you, or may have cut down on all the background processes thus leaving more breathing room for the cpu. Small differences in PC setups can sometimes lead to huge performance differences.
Also, while they may be using a weaker card than you, you aren't helping your situation by running at the lowest graphics settings. With higher graphics settings, the gpu works harder and the cpu works less - vice versa with lower settings.
There's a balance that must be met with these things. Perhaps things would level out for you on med or high settings? I mean, a 1080 is stronger than a 1070, so why not actually use that extra graphics horsepower?
Doesn't make much sense to be running at the lowest settings with it.

Why does 200+fps matter, when your true fps is only as high as your monitor's max refresh rate, 144hz?

I see.
Although you have 16GBs of ram, you're only running in single channel.
Buy a new 2x 8GB kit, or get the exact same stick as the only you already have.
It's safer to go with the new kit though, because adding sticks that weren't packaged together are not guaranteed to work.
