Question 2 drives with windows. Can't boot but need 2nd drive plugged into transfer old files before formatting

Alright, long story short. I hav 2 NVMEs and an HDD. The HDD has my original windows files. And one of the NVMEs has my new windows install and is my boot drive (we'll say SSD1). I need to get my old files off the HDD onto my spare empty SSD (SSD2) or (SSD1) I have a usb stick with the windows installer on it. I can format the HDD using it. But is there any way to get the music/documents/etc. Folders off the HDD before formatting it? The computer bluescreens without SSD1. But wont run with SSD1/HDD because of the two windows installs

With the HDD and SSD2 connected to the motherboard, are you able to set the primary boot device to your HDD(Windows Boot Manager)?
No, but I did find out that with all three plugged in, I could run windows on the HDD. Just not the SSD. So I was able to get all my files transferred to the empty SSD and then the C: drive SSD after formatting the HDD using windows installer.

If that hadn't worked next bet would be an external HDD bay and a usb cable
