Title says it all, this is the proposed build these components would go into.
Gaming build, looking to max fps and performance with longevity mostly on 1080x1920, looking to get 1440 monitor in the near future
Open to suggestions too, especially mobo

No way to say. It greatly depends on the game itself. It also depends on the resolution your run and how high you have the video settings.

In general if you are going to play to 1440 or 4k the gpu is going to be more important. If you are running 1080 on low settings trying to get maximum frame rates then the cpu might be more of a issue.

It depends how long you want to use PC for and if you willing to upgrade a part after.
really, most of my pc have had two GPU in them but only once updated CPU, so I would be more inclined to get the better CPU as the GPU is more likely to be replaced in a few years

but if you upgrade both at same time, every time... that doesn't really matter.
