I already have a PC with a r5 3600 and GTX1060, looking to upgrade, should I get a 2070 Super or 2080 or 2080ti, will the 3600 be a problem for any of those? (bottleneck wise) I'll be playing games such as Rainbow Six: Siege, CoD MW, Satisfactory, Shadow of the Tomb Raider and Apex Legends. I'm also aiming for 144 fps. Thanks :)

Make and model of power supply?

1080p? 2070 Super.
1440p? 2080 Super/2080Ti. The 2070 Super is also fine here if you're wanting to get the best value of the 3.
4K? Even the 2080Ti can't sustain high refresh in quite a number of titles until low settings.

What resolution are you planning to run? How many displays will actually be used for active gaming?

What level of quality settings are you willing to settle for on the most demanding titles?
I will be running 1920x1080, two monitors, only gaming on one. Currently run med-low settings, but I would like to stay above med.

PSU is a cooler master 750w gold, and yea 1080p
 
I wouldn't use that power supply with ANY of the graphics cards you've mentioned. The Cooler master MWE Gold series units are incredibly mediocre, not on par at all with the kind of power supply you should, or should want, to run with those kinds of high end graphics cards. I'd recommend that you factor in a new unit along WITH your purchase of a graphics card if you want to eliminate any potential for shortening the life of a very expensive piece of hardware like any of those graphics card models are.

For 1080p, there is absolutely no reason to go with anything higher than the 2070 Super, and the 2060 Super is likely already literally MORE than enough to handle Ultra everything at 1080p for the majority of games.
