Solution
I think I'll stick with the 3900X quite simply because I'll be using this PC for work as well so need it for a number of different softwares. Also might update this build in a couple years with a better graphics card, more ram, storage etc. So I kinda wanna finish all my allocated budget now and have to spend less later down the line.

It will do 1440p gaming just fine. However, there are some things that I would change. For one if this is purely gaming then there isn't any good reason to go with the 3900X as the 3700/3800X will be fine. I would use a different SSD and increase the storage amount of it.

This will have almost identical performance in gaming and come in cheaper. The 2TB SSD will be a better value than the 500GB + 4TB HDD.

The Ryzen 3700X doesn't need an AIO but the one here is very good, otherwise you can use the HSF linked and still have plenty off cooling and be even quieter.

Even the 3900X will be fine with the Be Quiet HSF, but the Arctic is even better at cooling.
