I'm looking to upgrade my gaming setup entirely, but I just wanted to start with my motherboard, graphics card, and CPU.

What would be some good parts to upgrade them with? My budget (for now) is 1,000$

Thank you.

Something like this should be pretty good...

What would be a good replacement for the ASrock? I'm a bit biased against them based off experience in the past.

Everything in my current PC was made in 2010 so I'm just replacing everything in there. Res is 1920x1080 and Hz is 240. ( just bought the monitor yesterday)
Ok for such a high Hz you want the highest FPS possible. This means going Intel i7/i9 with the best gpu your budget will allow. I would not consider AMD at this point. The i7 build above is good but I’d try and up the budget and go RTX 2070.

Oh I didn't think that would be a problem. What would be a good monitor(s) for builds above?

Asus ROG Strix B450-F Gaming
Or
MSI Tomahawk
Or
MSI B450 GAMING PRO CARBON AC

Any of these MBs will work well with the Ryzen 5 2600 and allow you to OC it fairly well with a decent after market cooler.
And they will also run a 2600x or 2700x well at stock speeds with at the stock cooler.

Yours is a good monitor and the Intel build will work well. Some games you might want to lower some game settings with the 2060 to push the FPS up.

Just a bit over budget, but this should do it fine...
