I'm stuck in the same boat, except that I water cooled my 980s so I am looking at the reference cards. On several of the games I am playing recently SLI isn't even a future plan, so I'm leaning towards a 1080.
I've been trying to confirm the EVGA ACX 3.0 is reference board with a non-reference cooler. Seems to be the consensus, especially based on the model numbers, but there is no photo evidence. I'm tempted to attempt SLI with the 1080 and get whatever I can for the 980s. But I also have the itch to re-build my system to get a NVMe drive to replace my Vertex 4s.
I'd rather get the $200 or so I can get out of a 980 now then wait until the 1060 is available in that price bracket.

Why would you want to get a 1060? It's going to be slower than a 980.
