About how much RAM and CPU speed is needed for a router on a home network so that it can support a large family that would include multiple devices internet browsing or video streaming, smart home devices, an Xbox, and a gaming PC?

Not much really. I recently updated to an ASUS RT-AC1750 (256MB/1GHz) router that runs 4 APs and supports a large number of devices with multiple wired/wireless VLANs and streams data off two large media servers and Internet streaming/gaming.

The real issue is the number of devices that attach to any single consumer quality radio, which is the bottleneck in a home network with many users.
