I'm planning on buying an SSD and I was either going to choose this one
WD Blue 3D NAND 250GB PC SSD - SATA III 6 Gb/s, M.2 2280 - WDS250G2B0B
or this one
WD Blue SN500 500GB NVMe Internal SSD - Gen3 PCIe, M.2 2280, 3D NAND - WDS500G1B0C
or this
Samsung 970 EVO Plus Series - 250GB PCIe NVMe - M.2 Internal SSD (MZ-V7S250B/AM)
and or
Samsung 860 EVO 500GB 2.5 Inch SATA III Internal SSD (MZ-76E500B/AM)

which one do I choose?

The Samsung 970 Evo Plus would get my vote, it s tad bit cheaper than the Samsung 970 Evo but better than the WD Blue's out there. If you were looking at the Black SN750, that'd get my vote if that was cheaper than the Samsung's.
The Evo Plus is only a couple dollars more than the Black SN750 250gb one. Should I get that? How faster would it be than the SN750? SN750 - $63. Evo Plus - $70

In reality, you won't notice much difference between them. The NVMe interface excels in data transfer at the moment, but in boot up and game load times you'll likely notice less than 1 second difference.

So I would tend to opt for the Samsungs purely on the basis of quality and reputation. Overall for speed, you won't notice much of a difference for your particular purpose.
