Was going to get a 5600X at release but was wondering if the b550 would be good enough as personally I'd rather get a decent B550 than a cheap X570

It is. You can put the upcoming 5950X in a B550 board, as long as it has good enough VRMS.
The main difference between X570 and B550
are these:
X570 has an annoying fan
B550 has less chipset pci-e lanes, and does not always have multi-gig networking, though it sometimes does have.
And some X570 boards are more solidly built.

or
