Hi all, can someone recommend a good air fan/cooler for the i7-8700k? One that isn't too expensive, doesn't interfere with memory and isn't too difficult to install?

Which case do you have or what is the maximum height for the cooler?

If you case will fit a cooler up to 155mm then I'd recommend the Scythe Mugen 5. It's quiet and would handle a good overclock on that CPU.

for the case i'm probably going to get the Corsair Carbide 275R mid-tower. Will that fan allow me to take memory in and out?
Yup, it'll fit and as long as your using a MATX or ATX board it shouldn't obstruct the memory.

If you look at the second picture in this build it won't obstruct the memory although they didn't install the second fan probably due to it being so close to the rear fan.

You should have more space so I'd install both fans.

this fan sounds great, thanks. only problem is that my local computer store doesn't carry it. If I buy it from amazon, it will arrive in june and I was hoping to buy all my parts this weekend. Is there any other options?

You can always go with the venerable Hyper 212 Evo, it's cheap, and will support a mild overclock too.

You can always go with the venerable Hyper 212 Evo, it's cheap, and will support a mild overclock too.

The CM EVO 212 would work ok at stock but I'd be hesitant to use to for a decent overclock and if/when you do decide to then your going to have to replace it which will be a waste of money. I'd spend a bit more and get something worthwhile or at the very least get the CM EVO 212 Black Edition which is a little bit better.
 
You have a nice case that can handle most any tower cooler up to 170mm.
I suggest the Noctua NH-U12s.

It is easy to install and is a very effective cooler.
8700K can get very toasty so you need better than an average cooler.

If you want the very best, that would be the noctua NH-D15s

The s versions are high compatibility versions designed to clear tall ram as well as graphics cards in the first pcie x16 slot.

From personal experience, I can tell you that the popular hyper212 is very difficult to install properly.
I would pick something else.

Same, its a pain to install by yourself. The newer 212 Black Edition is much easier to install but is really not something I'd pair with the 8700K, especially if you want to overclock. The recommended Noctua's would be a great choice.
 
The noctua s suffix variants are re-engineered for ram and graphics compatibility.
NH-D15 may have a ram issue, requiring you to raise one of the fans high enough to clear ram sticks.
NH-D15s and NH-D15 are comparable in performance and are about as good as you can get.
The noctua web site will show you the actual dimensions and what ram clearance you have.
I might add that tall heat spreaders are mostly cosmetic.
Low profile ram works equally well and will not interfere with any cooler.
