So I want to make a full tower build or a build where I can take and replace parts with ease. I want to build a computer that can play games and edit videos and also use Photoshop and do animation. I don't want any fancy lighting or anything. So I was wondering if someone could just make me a build and just showing me suggestions of PC building. I would like to spend 1500 to 2000 usd. Thank you for any help ahead of time.

Another question is what should I put more money torward and what should i put less into.

Here's what I would suggest

You can buy more fans to throw air into the GPU. Or you can buy something with better cooling than the FE 3080 (something like a ROG Strix or Gigabyte Eagle or Aorus)

1500 to 2000 of what currency? Prices and some parts in the US are not the same in the UK, AUS or other countries.

Very nice list everything very solid. Maybe would like to suggestion delete sata ssd and increase nvme to 1tb for OS and apps just re-use any hard drive you have for storages. Or maybe I have all wrong you tells me. I went with 1tb nvme and have the spot for 1 more nvme 3.0 but I not sure I ever use that. Maybe if prices drop some more which they probably will. Dont be upset at availability it just the way it is right now. I cried so much when I saw 32gb ram price I paid way more than that for 16gb of corsair ram. After much checking games I play only using 11gb of the ram anyways and I not do photoshop much anymores need the new cameras.
